Yoghurt omelette

Preparation  /   20 min
  • Mix the yoghurt with the eggs, flour and baking powder and leave it to rest for about 10 minutes. 
  • Add the herbs and a pinch of salt. 
  • In a frying pan, melt butter with some oil and fry the prepared mixture. 
  • Try not to stir, but flip the whole omelette (like you would a pancake) using a spatula when the bottom turns golden. 
Serving suggestion
Serve hot.

Chef’s tip
Instead of a savoury omelette, prepare a delicious sweet omelette by replacing the herbs with two tablespoons of ground walnuts or hazelnuts and a little sugar.
serve the sweet omelette with a fruit compote or entice it with fruit syrup.

2 dl 'z bregov yoghurt 
4 tbsp hard flour 
a pinch (around 2 g)  of baking powder
2 tbsp oil
20 g 'z bregov butter
1 tbsp fresh herbs, chopped (parsley, chives…)
