Tzatziki

Preparation  / 15 min
  • Grate the washed cucumber and salt.
  • After resting for a while, put it in a strainer with small holes, drain and gently press all the liquid out.
  • In a small bowl, combine olive oil, lemon juice, crushed or chopped garlic, a pinch of salt and spices.
  • Add to this mixture yoghurt and the cucumber, then stir well.
Serving suggestion
The well chilled tzatziki is served to Greek pie-bread (or flatbread) and grilled meat.

Chef's tip
When adding spices, be careful not to overdo it because during resting the flavors intensify. On Cyprus, instead of oregano the major spice is fresh minced mint.

300 g Greek yoghurt Vilikis
200 g of fresh cucumber
2 tablespoons olive oil
1 tablespoon lemon juice

salt
1 clove of garlic
1 teaspoon  oregano or dill
