  • Prepare white tea in 4 dl of water let it rest 10 minutes and then filter.
  • Use the tea to cook the chicken fillet previously cut into sticks. Remove it immediately and still warm season with salt and a spoon of olive oil.
  • On a serving plate combine the lettuce, flowers and chicken and cover with a mixture of olive oil, wasabi, lemon and with a spoon or two of tea. 

Ingredients / serves 2
200 g Cekin chicken fillet
1 tablespoon of white tea leaves
200 g mix of various young lettuce (rocket salad, spinach, watercress..)
2 tablespoonsof edible flowers (pansies, dandelions or similar)
4 tablespoonsof extra virgin olive oil
1 teaspoonof wasabi paste
 juice of half a lemon
 a pinch of salt
