Salmon with greek yoghurt and vegetables

Preparation  / 30 min
  • Mix the yoghurt with thyme leaves and salt mildly.
  • Make a dressing from 1 dl olive oil, lemon juice and chopped mint leaves.
  • Cut the zucchini, cleaned peppers and onions into sticks and tomatoes in half and mix it all together.
  • Stir-fry the vegetables in a preheated pan on olive oil, salt and pepper.
  • Saute the salted salmon steaks in a preheated pan on olive oil.
Serving suggestion
Serve the salmon steaks on a plate, put the vegetables next to it and in the middle put Greek yoghurt with thyme and drizzle all together with the dressing preparated of olive oil and mint.

4 fresh salmon steaks
150 g Greek yoghurt Vilikis
1 large zucchini
2 fresh yellow pepper
100 g cherry tomatoes
50 g green olives
1 small purple onions

fresh thyme
1 lemon
  fresh mint leaves 
  olive oil 
  salt and pepper
