Pancake cake


Preparation
  • Beat together the ingredients for the pancake mixture and allow to rest for 10 minutes before making thin pancakes (crepes).
  • In a saucepan, mix the milk, sugar, honey and vanilla. Bring to the boil, then add the semolina, stirring constantly, and cook for a few minutes. Remove the pan from the heat and add the chopped butter. Start to assemble the cake immediately. Place a pancake on the base, spread two tablespoons of the filling over it, sprinkle with a little cinnamon powder, and place another pancake on top. Continue until all the pancakes and filling are used up, ending with a pancake. 
  • Melt the white chocolate and cream in one bowl placed in a pan of hot water, and the dark chocolate and cream in another. Allow to cool. While still lukewarm, pour the dark chocolate over the cake, then pipe the white chocolate in stripes over it. Use a toothpick to create a feathered glaze. 
Serving: 
Allow the cake to cool before serving.

For the pancakes:

3 eggs
400 ml 'zbregov milk
3 tbsp sugar
1 pkt (10 g) vanilla sugar
5 tbsp plain flour
3 tbsp cocoa powder
1 tsp baking powder

For the filling:

750 'z bregov milk
6 tbsp sugar
1 pkt (10 g) vanilla sugar
75 g 'z bregov butter
170 g semolina
2 tbsp honey
Cinnamon powder

For the topping:

80 g white chocolate
40 g whipping cream 'z bregov
200 g dark chocolate
200 g whipping cream 'z bregov
