No-Bake Cheese, Avocado and Lime Cake

Preparation/ 60 min
  • Grind the biscuits and add melted butter. Combine and coat the bottom of the tin or mould with this mixture. 
  • Mix the whipping cream and add the whipped cream stabilizer following the instructions on the packaging. 
  • Heat the grated lime zest and lime juice over low heat and add the gelatine, soaked according to the instructions on the packaging. Stir until the gelatine melts. 
  • Mix the Capro Fresh cheese and peeled avocado passed through a fine-mesh strainer. Add the powdered sugar, melted gelatine and whipped cream. Stir well and smear on the biscuit base.
  • Mix the whipping cream for decoration with the stabilizer and powdered sugar and cover the cheese filling with it. Coat carefully with lukewarm gelatine cake topping.  
Refrigerate for a few hours and cut the cake into slices as desired. Serve immediately. 

For an approx 22 cm x 38 cm tin
For the base:
200 g of dark biscuits
100 g of 'z bregov butter
 For the filling:
280 gof Capro Fresh cheese
1 packetof whipped cream stabilizer
2 dlof whipping cream
200 gof powdered sugar
10 gof powdered gelatine (or 6 sheets)
 For decoration:
3 dl of 'z bregov whipping cream
2 tablespoonsof sugar
1 packetof whipped cream stabilizer
2 dlof gelatine cake topping with a few drops of green food colouring
