Mileram and fruit cake

Preparation method  / 90 minutes
  • Mix the yolks, sugar, baking powder, flour and butter into pliable dough. 
  • Leave the dough to rest in a cool place for about half an hour. 
  • Line 2/3 of the dough on the bottom of the tart pan.  
  • Whisk the egg whites until peaks form and gently fold in Mileram, vanilla sugar, sugar and coconut. 
  • Spread the mixture evenly on the dough.  
  • Put the pineapple on top of the mixture and grate the rest of the dough on top.
  • Bake in a preheated oven at 160 °C for about 40 - 45 minutes. 

Serving suggestions
Once the cake has cooled down, sprinkle with powder sugar.

Chef’s tip
Instead of pineapple, you can use canned pitted cherries. 
For the dough
50 g sugar
200 g hard flour
1/2  baking powder pack
100 g z bregov butter
For the filling
4   egg whites
500 g 'z bregov Mileram
vanilla sugar packs
150 g  sugar
50 g desiccated coconut flakes
400 g pineapple, diced
