- Cook the gnocchi, drain them and put them into an ovenproof dish.
- Add olive oil and stir well.
- In a separate bowl, mix the cheese, sour cream, egg and thinly sliced strips of bacon. Season to taste.
- Spread the mixture evenly on the gnocchi and bake at 200 C for about 10 minutes.

Serve hot and sprinkle with freshly chopped chives. |

Instead of potato gnocchi, why not use whole wheat, pumpkin or green gnocchi. |
