Fresh cheese and poppy seed dumplings with berries

Preparation  / 90 minutes
  • Mix the cheese with the cream, eggs, poppy seed, 2/3 of the semolina, a pinch of salt and sugar and vanilla sugar. Leave it to rest in a cool place for about an hour. If needed, add some more semolina. 
  •  Form dumplings around raspberries and boil them gently in water you've aromatized with rum until they float to the top. 
  • Drain every dumpling and roll into breadcrumbs fried on some butter. 
Serving suggestion
Serve warm. Sprinkle with some icing sugar and serve with frothy vanilla custard. 

Chef's tip
Instead of breadcrumbs, you can roll the dumplings in finely chopped hazelnuts or walnuts. 
Ingredients  / Serves  
300 g 'z bregov fresh cheese, drained 
50 g 'z bregov sour cream
eggs
50 - 100 g  wheat semolina 
2 tbsp ground poppy seed 
  a pinch of salt and sugar 
  berries (raspberries, gooseberries, ...) 
  a splash of rum 
  'z bregov butter and breadcrumbs
