Chocolate Half Spheres with Blueberries and Bovi Fresh Cheese

  • Mix the Bovi Fresh cheese, whipping cream, powdered sugar, lemon juice and zest until you get a smooth mixture with no lumps. Using a silicone brush, smear melted chocolate in a thin layer inside the silicone half sphere moulds that measure 6 cm in diameter. Leave the chocolate to harden and then add another layer. Leave in a cool place until the chocolate hardens. Cut the sponge cake base into 12 circles that measure 2 cm in diameter. 
  • Put the blueberries and sugar into a small pan. Crush them and leave the mixture to boil until all the sugar melts. Let the mixture cool and then pass it through a fine mesh strainer. 
  • Take three tablespoons of the cheese mixture and mix them with two sheets of melted gelatine. Stir well and pour a tablespoon of this mixture into each of the six moulds. Press one chocolate sponge circle into each mould filled with the cream. Refrigerate until the mixture in the moulds hardens. 
  • In the meantime, add three more tablespoons of the cheese mixture, two tablespoons of blueberry syrup and two melted gelatine sheets to the rest of the first cream. If the cream hardens too fast, heat the mixture in a microwave oven for a few seconds. Pour two tablespoons of the second layer of cream into each mould. Press the rest of the round sponge circles into the moulds and leave them to cool until the mixture in the moulds hardens. 
  • Add three more tablespoons of the cheese mixture, two tablespoons of syrup and the last two sheets of melted gelatine into the rest of the cream. Fill the moulds up with this mixture. Cool the half spheres until they harden and take them out of the moulds. Serve with a little leftover blueberry syrup.

1 pre-made chocolate sponge cake base
100 g of dark cooking chocolate
1 package of Bovi Fresh cheese
100 gof fresh or frozen blueberries
50 gof sugar
300 mlof 'z bregov whipping cream
1 teaspoonof lemon juice

a little lemon zest
150 gof powdered sugar
6gelatine sheets
