Chicken salad with curry and avocado

Preparation   / 30 minutes
  • Cut chicken into sticks or cubes, salt and drizzle with oil and little lemon juice.
  • Peel the avocado, cut into slices and immediately sprinkle with 2-3 tablespoons of lemon juice (to prevent from turning brown).
  • Cut stewed apricots into slices and mix with avocado.
  • Mix sour cream, curry, salt, pepper and 3 tablespoons of juice from the compote to obtain a uniform sauce.
  • Mix chicken, avocado and apricot with the sauce and put to a cool place for about ten minutes.
  • salt if necessary and serve.
Serving suggestion 
Can be served alone or on a bed of lettuce on a plate or in coctail glasses with homemade pastry of crispy gaguette.

This is the perfect appetizer (or a refreshing evening meal) for which you can use chicken meat that you cooked for soup.

300 g  cooced chicken meat
1 lemon
1 can or jar of stewed apricots
1 tablespoon 'z bregov sour cream
1 tablespoon minced sweet curry
1 tablespoon oil
salt and pepper
