Cheesecake chocolate pralines

  • Beat the eggs and sugar on top speed until fluffy. Add the vanilla essence, lemon rind, cheese (strained through a sieve) and cornflour. Mix well.
  • Line a rectangular baking tin or ovenproof dish (approx. 15 x 22 cm) with greaseproof paper or grease it with butter. Transfer the mixture to the tin.
  • Bake in a preheated oven at 170°C for 25 minutes.
  • Turn off the oven and allow the cake to cool inside. When cold, place in a refrigerator for several hours. 
  • Cut the cold cheesecake 'filling' into cubes and dip in the melted chocolate. Leave to cool on a wire tray at room temperature, then transfer to the refrigerator.
Serve the cubes in decorative paper baskets or as individual desserts, combined with a conserve of forest fruits and 'z bregov whipped cream.
Ingredients / 16-20 pralines
1 'z bregov cheese wrapped in cheesecloth (800 g)
4 eggs
20 g cornflour
250 gsugar
1 teaspoonvanilla essence
 grated rind of 1 lemon
 'z bregov butter (to grease the tin)
200 gdark chocolate
