Cannoli from Sicily

  • Mix together all of the cannoli ingredients apart from oil and egg-white and knead until the dough becomes smooth and elastic.
  • Wrap the dough to achieve about 2 mm thickness and cut it into 7 cm squares.
  • Roll the dough to achieve about 2 mm thickness and cut it into 7 cm squares.
  • Fold two angles of the square around the tube and use egg-whites to make them stick together.
  • Fry the cannoli shells in hot oil (190º C), in a deep fryer or in a straight-sided deep pot, fry a couple of shells at a time by turning them around until they achieve a nice golden brown colour on all sides.
  • Place them onto a kitchen paper to absorb the extra oil and remove them from the tubes while still warm by gently rotating them.
  • Mix the fresh cream cheese with sugar and orange peel.
  • Fill the cooled down cannoli with the fresh cream cheese filling and serve them dusted with powdered sugar.
Serving suggestion
Serve the cannoli shortly after filling, to keep them crispy. You can "dip" their ends in chipped pistachios or chipped candied dried fruit.

Chef's tip
Originally, the Sicilian housewives used to wrap the cannoli around chopped wooden tubes, even broomsticks, and fry them in hot lard.
Ingredients 
(makes 15 to 20 cannoli)

For the cannoli
150 g soft-wheat flour
50 g 'z bregov butter
1 egg-yolk
0,5 dl Marsala or Prosecco wine
20 g  vanilla sugar
espresso spoon (the smallest one) cocoa powder
  on tip of a knife cinnamon and salt
1 egg-white
  frying oil 

For the filling
400 g  natur Vivs fresh cream cheese
150 g confectioners' sugar
  some grated orange peel 

Extra

tubes 1.5 - 2 cm in diameter, metal or wood (similar to the ones used for cream horns) 
  confectioner's sugar for dusting
