Banana & Capro Fresh pie

You would love to meld bananas with fresh goat cheese, but the combination seems too exotic? Don't worry! Our Chefs know how to form even from the most fancy culinary creation a sweet dish that will delight indeed the most traditional gourmets among your guests!

  • Knead the dough and leave in fridge for about half an hour.
  • Mix all the ingredients for the filling with a mixer.
  • Spread the dough evenly (ca. 5cm thick) over a Ø 26cm cake mould.
  • Peel and crush the bananas and sprinkle with lemon juice.
  • Combine the fresh cheese with powdered sugar, vanilla sugar, starch flour, egg yolks and whipping cream.
  • Carefully blend in the bananas and whipped egg whites, spread the filling smoothly over the dough.
  • Bake the cake in the middle third of the preheated oven at 180oC for about 50 minutes.
  • Leave to cool down and serve.

280 g rough flour, type 400
140 g sugar
140 g 'z bregov butter
1 baking powder
1 vanilla sugar
2 eggs
  Salt
For the filling
mature bananas, crushed with a fork
1 žlica spoon lemon juice
750 g Capro fresh (fresh goat cheese)
250 g powdered sugar
vanilla sugar
40 g starch flour
3,5 dl 'z bregov whipping cream
3 eggs
