Baked courgette with white cheese / Greek style cheese

Preparation  / 35 minutes
  • Cut the courgettes into slices. 
  • In a frying pan, briefly fry the courgette slices on each side until golden.
  • Don’t overcrowd the pan. 
  • Grease an ovenproof dish with some olive oil and sprinkle with breadcrumbs.  
  • Place the courgette slices in the dish forming a roof-tile pattern.
  • Season with salt and pepper, sprinkle with a little oregano and pine nuts and add tomato passata. 
  • Sprinkle with crumbled Grabancijaš. 
  • Bake in a pre-heated oven at 200 °C until golden (15 minutes at most). 
Serving suggestion
Serve with mashed potatoes and salad as a light summer lunch or hot appetizer. 

Chef’s tip
Chilled dry white rosé wine will go perfectly with this dish.

400 g courgettes (zucchini)
200 g 'z bregov Grabancijaš salty cheese
4 tbsp tomato passata 

salt, pepper, oregano 
  olive oil 
2 tbsp coarsely chopped pine nuts
2 tbsp Latica bakery breadcrumbs
